This is a go-to green in our house for breakfast, lunch or dinner. Goes with anything savory.
large bunch of fresh kale or chard, chopped
1-2 cloves garlic, minced or pressed
pinch crushed red pepper
1/4 tsp cumin (optional)
juice from 1 lime (optional)
1/8-1/4 tsp salt
1 tsp olive oil (optional) use water instead
Sauté garlic and olive oil (if using) on medium heat, until it just begins to brown. Add chopped kale and salt and stir to cover with oil and garlic. Cover and turn off heat allowing kale to wilt, about 5-10 minutes. Add the pepper and cumin and lime juice, if using and stir.
