Buckwheat Pancake and Waffle mix

This recipe is directly from the book The Homemade Vegan Pantry. It’s an amazing book of staples, basics and delicious recipes. Makes a surprisingly light, fluffy waffle and pancake with a nice earthy flavor.

2 cups buckwheat flour

4 cups oat flour (can be made by grinding raw oats in a blender until a fine flour is produced)

1/3 cup coconut sugar or 1/4 cup cane sugar

6 tablespoons ground flax meal

5 tablespoons baking powder

1 tablespoon cinnamon

1 1/2 teaspoon salt (or less, to taste. also, *optional) 

Combine all ingredients in a large bowl using a whisk. Store in an airtight container.

Makes 6.5-7 cups

Waffles and Pancakes

1 cup buckwheat waffle and pancake mix

1 cup non dairy milk

1 teaspoon vanilla

Whisk ingredients together and allow the batter to sit for a few minutes to thicken up.

Cook waffles or pancakes until crispy and browned.
