Almond Pulp Chocolate Chip Bars

Each time I make almond milk, I try a new baked good or snack with the leftover pulp. This recipe makes a tasty, slightly sweet treat.

Makes up to 24 small bars.

INGREDIENTS: 

2 Cups almond pulp

1/4 Cup shredded unsweetened coconut

1/2 Cup chopped dates or date crumbles

1 banana, mashed

2 Tablespoons flax meal, plus 6 Tablespoons water (2 flax eggs)

1/2 to 1/3 cup chocolate chips

1/2 Cup rolled oats

DIRECTIONS: 

Heat oven to 350 degrees

Mix all of the ingredients together in a large bowl. Use clean hand to knead and blend if needed.

Line a 9×9 pan with parchment paper. Press the dough into the pan making a smooth flat layer. Wet the back of a spatula to smooth out the dough if sticky or lumpy.

Bake for 20-30 minutes until slightly brown and dried on top. Allow to cool and cut into small bars.
