After a quick search of what to make with leftover almond pulp, I settled on modifying a few recipes to make an oil-free semi-sweet treat with only 3 ingredients. The results are simple, slightly sweet and easy to make!
Preheat oven to 350 degrees.
Makes 14-16 macaroons
1 Cup fresh wet almond pulp
1/2 Cup date crumbles or chopped dates
1/2 Cup unsweetened shredded coconut
3-4 Tablespoons water, or more as needed
Place almond pulp, coconut and dates into a food processor and pulse to mix well. Add water one tablespoon at a time until a sticky dough forms.
Scoop dough onto baking sheet lined with parchment one rounded tablespoon at a time, forming little mounds. Bake for approx 15-20 minutes or until slightly browned. You can turn these over once if you’d like to brown both sides, but not necessary.
