Homemade Bread Stuffing

I love stuffing! It’s easy to make and so much taster when made fresh and homemade with dried sage and thyme. Perfect for all of your holiday meals.


3-4 cups of stale bread cut into small cubes, ( or purchase a bag of stuffing bread at your bakery)

2 Tbsp olive oil or Earth Balance vegan butter

1 3/4 cup water or vegetable broth

1 1/2 tsp thyme

1 1/2 tsp sage

1/2 tsp rosemary

1/2  onion, finely diced OR 1 whole leek, finely diced

1 apple diced into small pieces

1/2 cup dried cranberries

1 package seitan cut into bite sized cubes (optional) + 2 TBSP canola oil for frying


Put the seitan chunks and canola oil in a heavy bottomed pan and heat on high/medium high stirring occasionally until the seitan is browned and crispy. Season with the 1/2 tsp thyme and 1/2 tsp sage. Stir well. Remove from heat.

In a heavy bottomed skillet, add 2 Tbsp or olive oil or Earth Balance butter and onion or leek. Heat on medium until onion is softened. Add the apple and stir well. Add the stuffing bread and the water and remainder of the spices and stir. The stuffing should get a bit sticky. Add more water  or broth if needed. Mix in the seitan and dried cranberries.
