GF Vegan Granola Bars

I based my recipe on the Bob’s Red Mill recipe and made some modifications to make it gluten free, nut free and mixed up the fruits based on what I had in the pantry and skipped the chocolate chips.  I also halved the recipe to make a manageable amount! Next up, I will attempt to replace the sugar and oil.

Dry Ingredients:

1 cup shredded unsweetened coconut

2 1/2 cups Gluten free all purpose flour, store bought or make your own!  (6 cups brown rice flour, 2 cups potato starch, 1 cup tapioca starch/flour)

1 tsp xanthum gum

1/2 cup plus 6 Tbsp evaporated cane juice or vegan sugar or turbinado sugar

1 tsp baking soda

1 tsp salt

3 1/4 cup rolled oats

1/2 cup dried cranberries (and/or chopped dried apricots)

1/2 cup pumpkin seeds

1/2 cup sunflower seeds

1/2 cup finely chopped dates

Wet Ingredients:

1/2 cup plus 2 1/2 Tbsp molasses

1 cup canola oil ( I am tempted to replace 1/2 of this with applesauce…)

2 1/2 Tbsp ground flax meal plus 1/2 cup water

1 Tbsp plus 1 tsp vanilla

Directions:

In a large bowl, mix all of the dry ingredients until well mixed. In a separate bowl mix flax meal and water and let stand for a few minutes before adding the remaining wet ingredients. Pour the wet ingredients into the dry and mix thoroughly. Pour into a 13×9 baking pan and press down on mixture with wet hands until evenly spread and smooth. Bake on 350 degrees for 15 minutes. allow to cool completely before cutting.

    This sounds really good, thanks! I don’t have any dietary restrictions, but this may still be the first granola bar recipe I try to make!
