Burrito Bowl

So simple it doesn’t really need a recipe, but it’s been in the rotation lately so it’s going on the blog!


Brown rice (cooked according to package directions) or Trader Joe’s microwave Organic brown rice (3minutes)

1 can of black beans (you can drain and rinse if you prefer)

your favorite salsa

fresh arugula or spinach

1 avocado diced

1 tomato diced

1 onion diced

2 cloves garlic crushed

1 Tbsp olive oil

juice form 1/2 lime

1/2 tsp Mexican seasoning or Penzey’s ‘Northwoods’ spice is a favorite of mine


Cook rice according to directions or microwave for a super fast meal.

In a large heavy bottomed pan, add olive oil and onions and saute on medium heat until onions are softened. Add garlic and beans, and Mexican or favorite spices, stir and simmer for 10 minutes on low heat.


Make individual servings by putting rice in a bowl, add arugula or spinach and top with the black beans. Garnish with fresh avocado, tomatoes, salsa and a little bit of lime juice. Enjoy!
