This is the greenest soup I’ve ever seen! Enjoy your leafy greens and protein hearty chickpeas in a simple, quick soup.
1/2 onion diced
2 large garlic gloves, crushed or diced
1 can of chickpeas, well rinsed
1 bunch of chard, chopped
1/2 tsp cumin
1/4-1/2 tsp thyme
2 Tbsp olive oil
salt and pepper to taste
3-4 cups water or veggie broth
2 tsp potato, arrowroot or cornstarch
In a heavy bottomed saucepan or large soup pan heat olive oil and onions over medium heat until onions are softened. Add chickpeas and garlic and stir well. Add chard and sprinkle with salt and cumin and stir well-simmer on low heat until chard is wilted. Add broth or water, thyme and black pepper. Simmer for 10-15 minutes. Add starch and stir very well until mixed.
Use a strong blender or immersion blender and mix into a very smooth bisque. Serve immediately.
