This recipe want sent from Mom (the family bread baking expert) to try out my new bread machine. It’s from the Bob’s Red Mill Baking Book.


2 cups unbleached white flour

1 cup whole wheat flour ( I used spelt flour)

½ cup unsweetened oat bran cereal ( I used extra thick rolled oats, raw)

2 tablespoons brown sugar

2 ¼ teaspoons active dry yeast * follow bread machine instructions

1 teaspoon salt

1 teaspoon cinnamon

1 ¼ cups warm water

2 tablespoons unsalted butter (vegan version, use Earth Balance butter)

With your bread machine on the dough setting, add your warm water and then the remainder of your ingredients. (*My bread machine says to put the yeast into a special compartment and it is added automatically by the machine.)Press start and let dough cycle rest, mix and then rise until finished. This took about 45+ minutes.

* you may have noticed that your bread machine tells you to add the wet ingredients last, but Mom assures me to do it in reverse for better bread.

When bread machine beeps that the dough is done, turn/knead dough gently onto a lightly floured board. Shape into a loaf and place into greased 8.5”x 4.5”  loaf pan for about 45min-1hour. Bake in a preheated oven 375 degrees for 30-35 minutes.

If you have another shaped bread pan, feel free to bake bread in whatever you have.

An excellent breakfast bread, slightly sweet, hint of cinnamon.
