Black Bean Burgers

Simple and delicious in a bun or as the main course next to some mashed potatoes and steamed veggies!

INGREDIENTS:

2 cups cooked or 1 (15oz) can of black beans, rinsed

1/2 cup Bob’s Red Mill vital wheat gluten*GF varation, try 1/2 cup GF all purpose flour

1/2 cup bread crumbs, plain or seasoned *GF variation, toast GF bread and crumble into bits

1 tsp chile powder

1/2 tsp cumin

1/4 cup water

1 Tbsp tomato paste or ketchup

1/4 cup finely chopped cilantro (optional)

2 cloves garlic, crushed or grated

1/2 small onion, diced

INSTRUCTIONS:

Mash the beans with a fork or use a food processor until no whole beans are left-do not puree them!

Add wheat gluten, bread crumbs, chile powder, cumin, water, cilantro, tomato paste, garlic and onion.  Mix with a fork or wooden spoon and then knead with your hands until the mixture is firm and well blended.

Preheat a heavy bottomed pan over medium heat with a thin layer of oil or oil spray.

Divide the burger mix into equal size pieces and roll into a firm ball.  Press the balls flat with your hand to form a patty and place into the pan.  Cook about 5 minutes on each side until slightly browned and firm.  Enjoy!

You may also bake these at 325-350 degrees for 15-20minutes, turning over when each side is browned and slightly crispy.
