Swiss Chard and Caramelized Onions


1 large bunch swiss chard, washed and chopped

1 Tbsp non dairy butter (such as Earth Balance) or olive oil

2 yellow onions finely sliced

pinch of salt and fresh ground pepper to taste

Juice of one lemon

1 Tbsp brown sugar


In a large saucepan, saute the butter or oil over medium heat and cook onions until they begin to brown (about 5 minutes)

Stir in sugar and salt and pepper and continue cooking until onions are browned and sweet. (about 15 minutes)

Stir in the swisschard and cook until chard is wilted.  Squeeze lemon juice over the top, stir and serve.

Recommended Serving: This makes and ideal side dish served with a whole grain such as quinoa or brown rice and a protein such as baked or sauteed crispy tofu or seitan.  This can also be used as a pizza topping. *this is a GF recipe
