One sweet potato, peeled, diced into 1 inch cubes
One package seitan
1-2 Tbsp canola oil
1/2 tsp spice of choice
Once can black beans
1 tsp mexican spice mix
2 ripe avocados
1 large ripe tomato, diced
1/2 yellow onion finely chopped
1 Tbsp finely chopped cilantro
Juice from one lime
PART ONE: Homemade flour tortillas: (or 1 package store bought organic corn tortillas) * corn tortillas are often GF
2 cups of white flour *GF substitute GF all purpose flour with 1 tsp xanthum gum
1 1/2 tsp. baking powder
1 tsp. salt
2 tsp. vegetable oil
3/4 cup warm water
Combine the flour, baking powder and salt in a bowl. In another bowl combine the warm water and oil.
Add the water/oil mixture to the flour mixture, one tablespoon at a time and mix the dough with a fork. Once the water is mixed in, add another tablespoon of water and repeat the process until all the water is mixed into the dough.
The dough will be sticky. Knead the dough for 5-10 minutes until dough is nice and smooth.
Place the dough back into the bowl and cover it with a damp paper towel. Let the dough rest for about 20 minutes.
Divide the dough into golf-ball-size balls.Take each ball of dough and roll the tortilla until it is 6 or 7 inches in diameter and about 1/8 inch thick with a rolling pin.
Preheat a skillet or cast iron pan on medium high heat. Cook the tortilla until you will notice brown spots all over your tortilla. Flip it over and cook an additional 30 seconds.
PART TWO: Steamed sweet potato
In a small sauce pan add about 1 inch of water and steam sweet potato chunks until tender. Drain and set aside until ready to serve.
PART THREE: Crispy spiced seitan
In a skillet, add 1-2 Tbsp canola oil and add seitan pieces. Saute on medium heat until it begins to brown. Add about 1/2 tsp of your desired spice and continue to cook until crispy. *GF substiute crispy tofu cubes
PART FOUR: Black beans
Empty one can of black beans into a small sauce pan and simmer with 1 tsp of mexican spice mix until heated through.
Scoop out the insides of 2 avocados into a large bowl. Mash gently with a fork. Add tomatoes, cilantro, onion and lime juice. Add salt to taste and stir until mixed thoroughly.
Add a bit of each ingredient onto a tortilla and fold in half for tacos or wrap like a burrito and serve with salsa.
