Homemade energy bars


1 cup brown rice crisp cereal OR 1 cup thick rolled oats *GF make sure box/bag is labeled gluten free

1/3 cup pumpkin seeds

1/3 cup sunflower seeds

1/3 cup chopped dates or BRM date crumbles (*not GF contains oat flour)

1/3 cup dried cranberries

1/4 cup unsweetened shredded coconut

1/3 cup peanut butter or other favorite nut butter (or non nut butter such as sunflower seed, pumpkin seed or apple butter)

1/3 cup brown ride syrup *GF is labeled on jar


Preheat oven to 350 degrees.

Put all ingredients into a large bowl and mix with a wooden spoon until blended.

Put mixture into a 8×10 sized baking dish or brownie pan.  Wet hands with water and smooth out mixture evenly with hands to coat the bottom of the pan.  Bake for about 10 minutes.  Allow bars to cool in the refrigerator for at least 20 minutes before cutting into squares.  Can be kept in a sealed container.

For a larger baking pan (9×12) simply double the recipe to make more bars or bigger bars.

    I made these yesterday with puffed millet, perky’s crunchy rice cereal, pumpkin seeds, pecans, diced almonds, chopped dates, raisins, dried cherries, dried blueberries, chocolate chips, almond butter, rice syrup. They’re great! Way better than the heavy, cookie-like, homemade energy bars I’ve tried before.
