This is one of my favorite snacks ever since my friend Lauren had them at a little get together a while back. I have made them both baked and “fried” and tend to prefer the “fried” version.
1 can rinsed chickpeas
1-2Tbsp olive oil
pinch of salt and pepper
big pinch of your favorite spices.
Try Thyme with Sage and Paprika or Cumin, Coriander and Curry
Mix all the ingredients in a bowl and stir well. Spread out of a cookie sheet and bake at 350 degrees for 15 min or until slightly crispy.
Pour contents of bowl into a pre heated skillet and pan fry until crispy.
Allow to cool and serve as an appetizer or on top of salads, pasta, pizza, polenta or just about anything!
