The Vegan with a Vengeance recipe is my go-to for perfect pancakes:
1 1/4 cup all purpose flour ( or whole wheat pastry flour) GF variation us GF all purpose flour plus 1 tsp xanthum gum
2 tsp baking powder
1 tsp cinnamon (optional but awesome)
2 Tbsp canola oil
1/3 cup water
2 Tbsp maple syrup
1 cup rice or soy milk
1 tsp vanilla
1/2 tsp salt ( which i never seem to add)
Mix all of the ingredients into a large bowl. Do not over mix, a few small lumps are ok.
Pour batter onto a heated griddle or pan on medium heat. Use cooking spray to keep pancakes from getting stuck.
When the batter has bubbles all over the top, flip your pancake to cook the second side.
Add fruit, chocolate chips etc to make them even more delicious!
