lower fat vegan banana bread

This is the bomb proof banana bread recipe perfect for muffins or bread-bakes up perfect every time!

Avoid using any sort of mixer for this bread because it gets gummy-use a wooden spoon and just stir until all ingredients are mixed.

* gluten free variation included

Preheat oven to 350 degrees


3-4 ripe bananas

1/4 cup unsweetened applesauce

1/4 cup canola oil

1/2 cup sugar

2 tbsp molasses

2 cups all-purpose flour * gluten free, substitute 2 cups GF all purpose flour plus 1tsp xanthum gum

3/4 tsp baking soda

1 tsp cinnamon

1/4 tsp nutmeg

1/4 tsp salt

In a large mixing bowl, mash the bananas well. Add the sugar, applesauce, oil and molasses and mix well.

Stir in the flour, baking soda, spices and salt using a wooden spoon.

Transfer batter to prepared pan and bake for 40-50 min until lightly browned and a knife inserted comes out clean. If making muffins, bake for 18-20 minutes.

Add chocolate chips to batter for an added treat. Enjoy!
