healthier snacking: crustless apple pie

OK, so this is not an apple pie nor as sweet, but it’s a great healthy snack especially if you bought a bunch of apples with the good intention of eating them every day and now they are getting soft…….


4-6 apples ( any kind) diced into small pieces

1/4 cup water

2 Tbsp maple syrup or agave nectar

1/2 cup rolled oats ( I use Bob’s Red Mill extra thick rolled oats)

1/4-1/2 tsp cinnamon

1/4-1/2 cup dried fruit such as raisins or cranberries

Making the “pie”

In a large skillet/saucepan add the apples, oatmeal and water and simmer until apples begin to soften. Add the sweetener, cinnamon, dried fruit and stir. Cover and simmer for another 2-3 minutes. Serve warm or cold.


For Gluten Free folks that do not eat oats you can add some pre-cooked rice instead

Other tasty additions: nuts, fresh raspberries or blueberries etc
