sesame rice balls

This is another perfect lunch box food or appetizer/party snack. It’s perfect for using your leftover rice and you can use brown or white rice or better yet, sushi rice.

Making vinegared sushi rice ( or other rice)

2 cups rice, cooked

3 Tbsp rice wine vinegar

2 1/2 Tbsp sugar or maple syrup ( or 2 Tbsp agave nectar)

1-2 tsp salt

black sesame seeds

Heat the vinegar, sugar and salt in a small sauce pan until dissolved. Allow to cool completely.

After cooking the rice, allow it to cool a bit and add the vinegar mixture and fold into the rice. Try not to stir and crush the rice. You can fan the rice as you stir it to cool it off as well.

Roll one spoonful of rice at a time in your palms into a ball shape and roll in the black sesame seeds.

These look pretty and are a great healthy snack. You can also add small seeds to the rice for added flavor/texture.

sounds great. do you ever make a dip for them? Can you share that recipe as well?

although I’m not a huge fan of dips because of they tend to sneak up on you with added calories, sugars etc, I simply use Tamari or soy sauce for dipping the rice balls.

      A sweeter alternative is a sweet/spicy dip:
      1/4 cup rice wine vinegar
1/4 cup sugar or agave nectar
1 small crushed dried chili pepper or 1/8-1/4 tsp crushed red pepper

Heat in a small sauce pan for 2-3 min and allow to cool.
