This is one of the foods that I will make for a party appetizer, afternoon snack or part of (ok, the whole part) a lazy dinner! A simple and delicious protein source too. It’s best to make some homemade sourdough (rosemary is extra tasty) bread or pick up some as fresh as possible. GF breads also work well grilled or toasted.
Ingredients:
1 can white beans such as cannellini or chickpeas work well too
3-4 cloves of garlic, crushed or finely diced
1/4 cup olive oil
Juice from 1/2 fresh lemon
Fresh ground black pepper and salt to taste
Bean Aioli:
Simmer oil and garlic in a small pan until garlic has softened but not browned.
Blend beans in food processor until smooth. Add oil and garlic mix, lemon juice, salt and pepper and blend until very smooth.
Bread:
Slice bread into nice thick pieces and bush each side with olive oil. Grill each side for 2-3 minutes on a heated heavy sauce pan, regular grill or grilling pan. I just use a heavy cast iron pan on medium heat. (Oil may smoke if the heat is too high.)
Spread bean aioli on the bread and enjoy!
